Rainier Cherry Pancake Muffins

We have been very strict during this health crisis and have been staying home every weekend. That means plenty of free time at home that we use either to clean, have game/movie nights or bake. Here is one of our latest kitchen creations, perfect for breakfast or as a snack in the afternoon.

Ingredients

• ​2 cups Pancake Mix
• 1 1/3 cups milk
• 2 eggs
• 18 to 24 rainier cherries; rinsed, pits removed, and stems removed
• 1 cup syrup
• 4 tablespoons powdered sugar

Preparation

1. ​Preheat oven to 350 degrees F. Place mini liners into your mini muffin pan. If you don’t have liners then lightly grease the muffin pan.
   
2. In a medium bowl, whisk together, milk, eggs, and pancake mix. Place about one to two tablespoons of batter into each muffin slot. Place one cherry on top of each muffin.
   
3. Bake for 12 to 14 minutes until lightly browned on top. Let cool 3 to 5 minutes and then top with powdered sugar and dip into syrup.
