Passion Fruit and Orange Sauce Salmon

Our family loves to eat Salmon, we try to eat it at least twice a week as our source of Omega-3 Fatty Acids. Salmon is not only delicious but it is also a great source of protein and it goes with a lot of side dishes, which makes it very versatile as an entrée.

I have decided to try a new recipe this year to surprise my husband for Valentine's Day. I wanted to incorporate an exotic fruit to our menu, so I chose passion fruit for the sauce for our salmon and also for our dessert.

Ingredients

• Skin-on salmon fillets
• 2 tablespoons olive oil
•  1 tablespoons unsalted butter, cold
• Salt and ground black pepper, to taste
• Flesh of 2-3 fresh passion fruits
• 1/2 cup juice of blood orange
• Blood orange slices to bake salmon
• Thyme leaves, to taste
  
• 1 tablespoon sugar
• 1 tablespoon honey to taste

Preparation

1. Season the salmon on all sides with salt and pepper.
2. Place salmon on aluminum foil with olive oil, blood orange slices and thyme leaves.
3. Bake salmon for 12-15 minutes
4. Remove the fish to a plate and reserve.
5. Pouring the passion fruit juice and blood orange juice into a skillet. Add honey and sugar and whisk constantly to thicken the sauce, about 1-2 minutes. Once the sauce is thickened remove from heat and add one tablespoon of cold butter, whisking vigorously to emulsify.
6. Taste the sauce and adjust the sweetness as needed.
7. Arrange the salmon skin side-down on a platter, with the passion fruit sauce spooned over the fillets.
8. Serve with baked potatoes and asparagus for a delicious meal
