Instant Pot Turmeric Turkey Stir Fry

I use my Instant Pot a few days a week because it makes cooking easier and faster. I work outside the home, so I do not always have time to plan for dinners, but I can put a few ingredients and I will have a ​wholesome dinner on the table in less than 30 minutes.

A good stir fry is always fulfilling and the whole family will love the flavors of the vegetables with the meat and the rice. Here is is a super simple recipe with ingredients that you probably already have at home.

Ingredients

• 4 turkey cutlets or 1 turkey breast (cut into cubes)
• 1 head of broccoli; diced
• 1 bag of sugar snap peas
• 1 1/2 cups matchstick carrots
• 1 white onion; halved and sliced into rounds
• 1/3 cup coco aminos
• 2 teaspoon turmeric
• 1 teaspoon black pepper 
• 1 tablespoon cornstarch

Preparation

1. Place diced turkey into instant pot along with one cup of water. Place lid on instant pot. Set valve to sealed position and set on manual or pressure cook for 15 minutes. Once the instant pot stops counting release pressure.
   
2. Remove lid and turn off. Turn on sauté mode. Mix together turmeric, coco aminos, pepper, and cornstarch. Whisk well and then pour to top on turkey. Stirring until the sauce thickens. Once it thickens add in broccoli, peas, onions, and carrots. 
   
3. Place lid on top of the pot but do not seal. Let steam like this stirring every few minutes until vegetables are to your desired tenderness. 
   
4. Serve with white rice.
