Last week I joined a few other bloggers from the Los Angeles area at the California Health & Longevity Institute at the Four Seasons Hotel Westlake Village for the Dole Fall Blogger Summit Celebrating Disney’s Frozen
We started the day with a breakfast reception and a Disney’s Frozen “Icebreaker” Trivia Activity
After enjoying our delicious breakfast we started the day learning all about the alliance between Dole and Disney.
Dole has been committed to creating healthier generations and they believe they can partner with parents and inspire kids to eat better, be more active, and be their best. We also learned about Disney’s Mickey Check. Did you know that the Mickey Check was the first healthy-lifestyle tool for kids and families? Studies show that 88% of parents and 96% of kids find the Mickey Check appealing. Then we had a hands-on world tasting premiere of original Dole recipes inspired by Disney’s Frozen 2. We prepared the following recipes:
Dole Snow-flower Pizza
Vegetarian, Gluten Free
Prep: 20 minutes Bake: 40 minutes Serves: 6 ½ (8-ounce) package DOLE® Mushrooms, sliced ½ medium DOLE® Russet Potato, very thinly sliced ½ medium DOLE® White Onion, chopped 2 cups small DOLE® Cauliflower florets 1 tablespoon olive oil ½ teaspoon kosher salt ¼ teaspoon ground black pepper 1 box (12 ounces) frozen gluten free cauliflower pizza crusts (2 crusts) 1 cup fat free ricotta cheese 6 garlic cloves, finely chopped 3 tablespoons chopped fresh basil 1 cup DOLE® Organic Baby Spinach & Arugula Crushed red pepper flakes (optional)
Approximate nutritional values per serving (2 slices): 261 Calories (76 Calories from Fat), 9g Fat (11%) (1g Saturated/7%), 0g Trans Fat, 3g Polyunsaturated Fat, 5g Monounsaturated Fat, 22mg Cholesterol (7%), 321mg Sodium (14%), 37g Carbohydrates (14%), 215g Potassium (4%), 4g Fiber (14%), 4g Sugars, 7g Protein (14%), Vitamin A 2%, Vitamin C 20%, Calcium 8%, Iron 4%, Vitamin E 2%, Thiamin 4%, Vitamin B6 10%, Phosphorus 4%, Magnesium 4%, Manganese 10% Chef Tip To freeze pizzas, cool roasted vegetables and proceed through Step 3. Wrap pizzas with plastic wrap then foil and freeze up to 3 months. Bake pizzas from frozen at 425°F for 22 minutes or until crust is golden brown and crisp, and internal temperature reaches 165°F; top with spinach & arugula. Frozen Banana Split Cups

Prep: 15 minutes plus freezing Serves: 12 2/3 cup gluten free dark chocolate chips 2 teaspoons grapeseed oil 3 DOLE® Strawberries, hulled and thinly sliced 1 ripe DOLE® Banana, peeled and thinly sliced 3 tablespoons chopped roasted unsalted peanuts
