I have to tell you that the following recipe is addictive. I tried them at a Mexican fair once and I loved them. I learned later that in Mexico and some cities in the US there are some street vendors (Eloteros) that have a little car and go around the neighborhoods selling them, and all I could think is I am lucky they do not pass by my house because I will be buying them all the time.
But then I realized it is a very easy recipe and I can make them at home and I could modify it to make it healthier and using organic products. And since I got some corn to use with my new corn kit, I was inspired to try a new recipe.
Boil the corn. Once soft, remove form water and drain.
Spread with the organic mayonnaise, sprinkle with cheese and the chile powder.
