Disclosure: This is a sponsored post, however all opinions expressed are my own. We have been more than busy lately. We are on the go and we do not have a lot of time to eat homemade meals. But, since we like eating well, I decided to modify a dish that we all love, make it a somehow healthier version and easy to prepare. As you know I am not Mexican. So this is a modified recipe for Chilaquiles. Since I work full time outside the home, I did not cook from scratch. I used some store-bought enchilada sauce to help with the time needed to prepare the recipe, but if you have time, I would recommend spending some time making your own sauce. The best part about making this recipe is that I was able to use high quality products that taste really good. In one trip to the store I found the ingredients needed and even more Cacique products that I even knew were available. Preparation time from start to finish was like 30 minutes. To make this Chilaquiles healthier, I chose to bake the chips instead of frying them. Now, let me tell you a little secret. Although I only mention Queso Fresco on my recipe, my husband actually added every single one of the cheeses to the baked recipe and it actually tasted really good. Next time I will prepare it with all cheese blends. We had one of my Mexican friends for dinner and they actually enjoyed my modified version of the recipe. One of these days I will actually prepare the enchilada sauce at home and will share that recipe with you as well. For now, let me enjoy my under 30 minutes to prepare meal and head out the door for our next adventure.
