Avocado-Mango Smear with Pumpkin seeds

A couple of weeks ago when I asked the family what they wanted to eat for dinner, they said they wanted breakfast for dinner. I was not in the mood to really cook. As a busy mom I need recipes that are simple and fast. Most of the recipes we prepare at home take less than 30 min to put together. Bays English Muffins for sure help us with the easy cooking.

I opened the refrigerator. I realized it was time to go shopping, too. But I was being lazy. I was going to wait until the weekend to go buy groceries. One of the cool things about preparing something with Bays English Muffins is that you can improvise and use as little ingredients as possible. I mean just the Bays English Muffins with butter can be a good small bite before going to bed. I found some avocados and mangos in our fruit basket. So our recipe for the night was avocado-mango smear with pepitas. Literally in less than 10 minutes dinner was served. Preparing dinner has never been so convenient.

Avocado-Mango Smear with Pumpkin seeds

Ingredients
● 1 small ripe avocado
● 2 BAYS English Muffins, split and toasted
● Dash of salt
● 4 mango slices
● 2 teaspoons of pumpkin seeds

Instructions
1. Smear avocado on muffin halves, and sprinkle with salt
2. Top with mango and pumpkin seeds

Serving suggestion: you can add meat toppings such as bacon or prosciutto
