A snack satisfies the whole family: Fiber One’s Cheesecake Bars

It is hard to believe that we are almost done with the first quarter of this year. The good news for me is that I have been able to stick with my New Year’s resolution (goal) of staying healthy and losing some weight. It has not been easy. I cannot believe how many parties and celebrations we are invited to every single week, with so many food temptations. My goal this year has been not to deprive myself of food but to eat a little bit of everything but in moderation.

I have been allowing myself cheat meals. I have been trying really hard to stick to just cheat meals and not cheat days. Sometimes it is harder than it seems. How can you say no to cheesecake? We also had another change on our lives this year. We started the process of homeschooling. My son who was a fifth grader was not being challenged enough, so we decided to pull him out of school and start the journey here at home.
