Shrimp Crepes

Crepas de Camarones

Ingredients

4 eggs
1 cup flour
1/2 cup milk
1/2 teaspoon salt
1/2 cup chicken stock
1 tablespoon melted butter

Ingredientes

4  Huevos
1 Taza de harina
½ Taza de leche
½ cucharadita de sal
½ Taza de consomé de mariscos
1 cucharada de mantequilla derretida

Preparation of crepes
Preparación de las crepas

Crepes: Beat all crepe ingredients together with a wire whisk until they are smooth. To prepare crepes, lightly butter a skillet and heat. Cook until light brown, turn and cook the other side. Set aside until ready to use and make sure to cover them with a towel so they do not dry out.
Crepas: Combine todos los ingredientes con un batidor manual hasta que la mezcla este suave. Para cocinar las crepas, engrase una sartén y permita que la mantequilla este caliente. Cocine las crepas hasta que estén doradas y voltéelas para que se cocinen por el otro lado. Póngalas a un lado hasta que esté listo para usarlas, y recuerde cubrirlas con una toalla para que no se resequen.

Shrimp filling 
Relleno de Camarones

Ingredients

2 tablespoons butter
1 tablespoon olive oil
1 1/2 pound raw medium shrimp peeled
4 tablespoons minced garlic
salt and freshly-ground pepper to tasteParmesan cheese

Ingredientes

2 Cucharadas de mantequilla
1 cucharada de aceite de olive
1 ½ libra de camarones pelados
4 cucharaditas de ajo rallado
Sal y pimienta al gusto
Queso parmesano

Preparation of the Shrimp filling
Preparación del relleno de camarones

Preparation filling: In a skillet over medium-high heat, warm the butter and olive oil. Saute the shrimp until they turn on a pink color and then add the garlic, salt and pepper. Let it saute for 1-2 minutes. 

Put the shrimp into the crepes and  top with a little of the sauce and cheese.
Preparación del relleno: En una sartén a calor medio, caliente y derrita la mantequilla y el aceite de oliva. Cocine los camarones hasta que tomen un color rosado y añada el ajo, la sal y la pimienta. Luego deje cocinar por 1 o 2 minutos adicionales

Ponga los camarones encima de las crepas, con la salsa y queso

The ambassador program has come to an end. However my journey to get healthy does not stop here. Thanks to the awesome tools provided by OmronFitness I will be able to continue exercising and keeping track of everything from weight, calories, to BMI.

Color me Rad, a 5k with a color twist

So, 2013 is the year for me to become healthier. I am doing things that I had never though about before.

So, I am not only losing weight, but I am changing the way I do things. I am exercising, I am eating healthier and I am involving my family on the changes.

I am challenging myself to try new things and do more fun things. So when I heard about the color me rad 5k, I was very interested.

Not only this is going to be my first official 5k, but also it is going to be a really fun one. 

In this race, you start the day with a white t-shirt and end up all full of color. It is for all ages, so I am motivating my son to race with me. It is a very fun way to get active

I will be doing the one in Los Angeles on 05/15/13, but you can check the website to see if there are races near your hometown.

Not only the races are fun but they sponsor a local non-profit organization as well. In California this year they are donating to the Special Olympics of Southern California.

Pasta con vegetales (sin carne, pero sabrosa)

Tomorrow is Ash Wednesday and I have to think what to prepare for lunch for everyone here. Something my son can take to school, I can take to work and hubby can have while working on his shop.  Something without meat, but not only with great taste but nutritive.
Mañana es miércoles de ceniza y he estado pensando que preparar para el almuerzo de todos acá en la casa. Debe ser algo que mi hijo pueda llevar como almuerzo a la escuela, yo pueda llevar al trabajo y mi esposo pueda comer en su taller. Debe ser algo delicioso, pero también nutritivo.

Ingredients

2 cups of Pasta

1 cup of Broccoli

1 can of Peas and carrots

1 can of mushrooms

¼ cup Milk

¼ asparagus cream soup mix



Ingredientes

2 tazas de pasta

1 taza de brócoli

1 lata de chicharos (arvejas) y zanahorias

1 lata de champiñones (hongos)

¼ taza de leche

¼ sobre de crema de espárragos

Broil the broccoli until soft
Cocine el brócoli hasta que este suave

Mix the milk, the asparagus cream mix, the mushrooms, the peas and carrots and cook until the sauce is ready. Mix with the broccoli


Mezcle la leche, la mezcla de la crema de espárragos, los chicharos, zanahorias y cocine hasta que la mezcla (salsa) este espesa. Mezcle con el brócoli.

Combine the pasta with the sauce and serve with cheese.
