- 1/2 cup quinoa
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- salt and black pepper
- 1 cup of cherry tomatoes (cut in half)
- 1 small cucumber (diced)
- 1/4 cup of cilantro
- Cook the quinoa (follow package directions) and let cool down.
- In a large bowl, add all ingredients then toss to combine; season with salt and pepper to taste.
