One of the best things I have learned to prepare is Agua de Tamarindo. It is super easy to prepare and it is very refreshing and goes well with a lot of foods (not only with Mexican food).
16 tamarindo pods
½ cup sugar (or healthy sugar replacement)
- Peel the tamarindo. Remove and discard the shells.
- Soak the fruit on water for one hour
- Remove the seeds
- Strain the juice
- Blend the tamarindo mix and add sugar to taste
- Serve cold or with ice
